It absorbs energy by bending a little but doesn't break (which would allow the other guy's skull to come crashing into yours)
A more study material like steel would be 1) too heavy to wear and 2) wouldn't absorb any impact energy. It would just transfer it directly to the skull on the inside.
Kevlar is light, durable, and bends just enough to dissipate energy over the entire surface rather that directly down to the skull underneath.
